300 gm of Brinjal - cut into cubes
3 green chilles
2 garlic pods
1 inch ginger
1-2 tsp of coconut grated/decicated coconut
1/2 cup Coriander leaves
1/2 tsp of chilli powder/cayane powder
1/2 turmeric powder
1/2 of coriander powder
1/2 tsp of cumin powder
1/2 tsp of whole cumin
3-4 tbsp of oil
Procedure:
- Prepare the green masala or hara masala by grinding green chilles, garlic, ginger, coriander leaves and coconut adding a little water.
- Heat 2 tbsp of oil, cumin and let it splutter.
- Add cubed brinjal and fry for a minute
- Then add chilli powder and turmeric powder and mix well.
- After brinjal are a little tender and the brinjal's outer covering is shiny, remove and keep aside.
- Heat rest of the oil and add the ground masala and cook till oil leaves the green masala.
- Add brinjals and mix it well.
- Add a cup of water, simmer till the brinjals are cooked and oil appears at the top.
- Add cumin ans corainder powder and simmer till the gravey is thickened.
- Serve hot with rice or chapati or paratha. Sprinkle of lemon juice if you like.
- Enjoy your hara baingan.
